Senior Food Service Director - MDOC

The Senior Food Service Director will plan, direct and coordinate the activities associated with running a single site, stand-alone food service operation. This position is in charge of the operational and financial responsibilities for the kitchen(s). Supervises an AFSD, Unit Manager(s) and/or a team of Food Service Supervisors and/or Cooks who are involved with the preparation, serving and clean-up of food in a secure correctional facility.

The Senior Food Service Director will be assigned to handle the most critical and challenging facilities throughout the state of Michigan. Flexibility to relocate within the state of MI based on business needs will be required.

Essential Job Functions
  • Supervise, train, and instruct team members and/or inmates in general food service practices, including the preparation, cooking, and serving of food
  • Oversee the appropriate quantities of food are prepared and served according to menu management systems, the facility or site plan
  • Hires, orients, trains, retains and issues corrective action (when applicable) to team members
  • Review and approve payroll on a bi-weekly basis
  • Coordinate the work flow and assign work to team members
  • Adequately train, maintain and document all team members on client, site specific and regulatory items requirements that ensures individuals are capable to perform job responsibilities safely
  • Ensure all team members are adequately trained and capable to perform job responsibilities safely
  • Responsible for maintaining accuracy of inventory in advance preparation of planned menu schedule
  • Ensure ordering and all required invoices and reports are completed accurately and posted on time
  • Knows and complies with client's contractual obligations
  • Maintain product service quality standards
  • Maintain a sanitary environment following food service and Health Department codes
    and regulations
  • Maintain accurate on-site reports of daily and monthly financial, production, and activity
  • Responsible for any state or other inspection of food service operation
  • May participate in the contract negotiation and renewal process
  • May perform other duties as assigned

    Minimum Requirements

  • Ability to lead a team in a high volume food production environment
  • Ability to motivate and supervise team members to attain quality and quantity of food production in a correctional work environment
  • Contract-management service experience is preferred
  • Strong training skills, cost controls experience and the ability to effectively lead a kitchen management team is strongly desired
  • Strong oral and written communication skills
  • Ability to exercise good judgment and tact
  • Proficiency in all Microsoft Office applications is required
  • Ability to understand profit and loss statements is preferred

  • High School diploma, GED certificate, or other proof of education
  • At least seven (7) years of food service experience preferred
  • Five years' of management or supervisory experience in a food service environment preferred
  • Knowledge of basic accounting and mathematical abilities to complete necessary reports
  • Experience with safety standards and procedures as applied to the worksite, food preparation and cooking
  • Must have experience with purchasing, inventory, ordering, receiving and cost control
  • Proficiency in all Microsoft Office applications is required
